If you're new to the format, mookata (Thai: mu kratha, หมูกระทะ) is the Thai answer to "why choose between barbecue and steamboat?" A domed grill pan sits over live charcoal: you sear meat on the raised crown while a moat of broth around the base boils your vegetables, noodles and seafood.
